My Healthier Coconut Cream Poke Almond Cake

It's the COCONUT CREAM POKE CAKE with a twist. Yes, it has sugar in it and I LOVE IT.

WHAT TO BUY

Simple Mills Almond Flour Vanilla Cake & Cupcake Mix

1 tub of Cool Whip Lite

Shredded Coconut (raw chips or shavings with sugar)

2/3 can of GOYA Cream of Coconut

HOW YA DO IT

  1. Bake the cake according to package directions
  2. Immediately poke holes into the cake with your fork
  3. Pour 2/3 can of Cream of Coconut over top the cake. Let it settle throughout the cake
  4. Let the cake then cool in the fridge
  5. Once cool, add the cool whip topping to the cake
  6. Top with coconut shavings
  7. Serve and eat up you deserve it!

**You can also find lighter versions or opt for the raw cream of coconut, but it definitely doesn't taste as good and the consistency is different. It's OK to live a little and enjoy your sweets. Everything in moderation!**

It tastes too good not to try it!
