Quinoa Crunch Bowl

A little CRUNCH goes a long way. Especially when you're talking salad! I know I'm always looking for that extra little something to spice up my greens and of course make them more "filling". You know the good old "I had a salad for lunch...then I ate a bag of chips, a granola bar and a cupcake" line. Not with this salad/bowl! 


WHAT TO BUY

1 handful spinach

1 cup cooked quinoa

1 cup chopped baked sweet potatoes

1/2 avocado sliced

1/2 cup chopped cherry tomatoes

1/2 cup chopped cucumber

1/2 cup rinsed/dried chickpeas

1/4 cup slivered raw almonds

1 tsp Everything But the Bagel Seasoning (TJ's) or Borsari Salts 

1 tsp Apple Cider Vinegar

1 TBSP EVOO

HOW YA DO IT

  1. Step 1: Whisk together EVOO + Apple Cider Vinegar + Seasoning Salts (Borsari or Everything But the Bagel)
  2. Step 2: Cook the quinoa according to package directions (you can also sub in farro or rice if you like) 
  3. Place the spinach in a large bowl and mix in the EVOO + vinegar combo. Massage the spinach leaves with the dressing. 
  4. Begin placing the quinoa and veggies into the bowl however you would like. Top with avocado and slivered raw almonds. Add a little salt and pepper to taste and get after it.

You know your day will be complete after this protein packed bowl!
